Metodo Classico (Traditional Method)

This wine , made from Pinot Noir and Chardonnay grapes harvested from vineyards at medium /high altitude hillsides , is fermented in second year French oak barrels . The wine undergoes a “battonage” process ( stirring ) for the initial 4 months and it is then naturally cleared for another two months . Its cleanness is simply obtained through a natural static decanting, it is never filtered nor clarified. Ageing on the lees ( for at least 24 months ) takes place in our cellars , in our family estate of 1850′s , where changes in temperature are slow and follow the natural course of the seasons.
