“Lavorare stanca” (Work is tiring) is the title of a small great work by Cesare Pavese, noble son and unforgetted intellect of our land. This is the only wine that we produce without following the “Metodo Classico” line. It was born from the need to produce a Pinot Noir vinified in red which could be then assembled for the production of the Rose Metodo Classico Sparkling Wine, A small part of this wine is bottled so as to allow you to discover, from another perspective, the sensory and gustatory soul of our lands.

The method
Winemaking
The harvest is entirely manual. We carry out a destemming and a partial crushing with a consequent cold pre-fermentation maceration for 5 days. The alcoholic fermentation and the maceration, with a part of grape stalks, takes place in steel tanks for 12-15 days at a controlled temperature (about 26°C). Then there are the drawing off and malolactic fermentation in wooden barrels, with subsequent aging for 12 months.

In addition to give a unique packaging to every single product, our company has decided to create specific boxes for each type of bottle. The box, made by a paper industry, will evoke the shades of the various labels, with the aim of helping customers during the exhibitions and above all in retail.
