It was inspired by a particular bottle of Champagne during a summer evening. From that sparkle, a challenge with ourselves began: create a sparkling wine with no sulphites added also in our winery. It took years of experimentations, in which we traveled many untracked roads, before being able to put it on the market. Mono black grape variety, it was the first Italian Metodo Classico Sparkling Wine with no sulphites added serially produced.

Fine and persistent perlage, intense straw yells color with golden reflections. The aroma is very expressive with hints of rusks and citrus. The mouthfeel is complex and vibrant, with extraordinary freshness and persistence.

The harvest is entirely manual. The whole bunches pressing is soft with a traditional Coquard press, with fractionation of the various pressing phases and low grape/must yields. The alcoholic fermentation of the musts takes place in used French oak barrels with subsequent aging on the lees. The wine is then bottled for the second fermentation, without clarification or filtration. Product exclusively without added sulphites.

In addition to give a unique packaging to every single product, our company has decided to create specific boxes for each type of bottle. The box, made by a paper industry, will evoke the shades of the various labels, with the aim of helping customers during the exhibitions and above all in retail.
